Abstract The richest chemical composition of honey determines its extremely high biological activity. and concentration bioactive compounds largely depend on botanical origin, i.e. they are determined by nectar the pollen nectariferous plant, soil which grow, as well climate weather conditions. Along with enzymes minerals, vitamins found in small but measurable amounts. Vitamins mainly represented B-group vitamins. content varies according to origin. following types were used for study: acacia, sunflower, chestnut, linden, buckwheat. quantitative determination water-soluble (thiamine, riboflavin, pyridoxine, pantothenic acid, nicotinic acid) various origin was carried out accredited laboratory direction research beekeeping products Federal Research Center Beekeeping method capillary electrophoresis. It revealed that chestnut buckwheat present highest levels content; confirms prospects their use a source unstable can be easily destroyed factors. Under impact daylight, studied contained during storage. dynamics changes traced storage 12 months dark place light. Riboflavin andnicotinic is significantly reduced, caracterized higher sensitivity action daylight honey.
